Amelia Evey has been with The Grain Shed since the beginning, working summers while achieving a B.S. in Food and Fermentation Science from WSU in 2020. Since graduating she has been able to further her passion for baking and fermentation by working with the unique ingredients and methods The Grain Shed is known for. While passionate about the art, science, and craft of baking, she also revels in sharing and supporting the mission and culture of The Grain Shed. A life-long Spokane local, witnessing and participating in the growth and elevation of Spokane’s food scene continues to be an amazing experience.

TOBY CARROLL - VICE PRESIDENT

Toby Carroll has been cooking at The Grain Shed since October 2019. He can be seen heading up Falafel Night on Wednesdays, making pizza every Monday, and making food for our to-go case during the week. Originally from Juneau, Alaska, he graduated from California Culinary Academy in San Francisco. He then spent over 20 years cooking in restaurants in Seattle, ending with a six year run in front of the wood-burning oven at Bar del Corso. He is an avid reader, runner, and cyclist and lives on The South Hill with his wife Rachel and her very smart dog Helen.

Joel Williamson arrived in the business and entrepreneurship realm from something much different - the theatre world! Though he spent many years working as a professional lighting designer for the stage, it was in his family's large rose growing greenhouse on Spokane’s South Hill where he saw how a truly local business can function. After his time in theatre, Joel earned his Master’s in Business Administration with an emphasis on Entrepreneurship and Sustainable Business Finance from Pinchot University. He then co-founded Local Inland Northwest Cooperative Foods (LINC Foods) and LINC Malt to connect locally owned and operated farms with schools, restaurants, institutions, breweries, distilleries, and customers with the finest food and malt in the area. With his passion for brewing and his experience with malting, Joel is one of our brewing masterminds as well as our unflappable business expert. Joel and his wife Lauren call South Perry their home, where they have lived for almost a decade.

Teddy Benson is one of our brewer-owners, but comes from a world far away from beer. With Bachelor’s and Master’s Degree in Education, Teddy comes from the world of teaching in the Mead School District in north Spokane. His love of teaching has transitioned to sharing The Grain Shed’s mission and vision with our community through our social media. He also spends a good deal of his time brewing beer, keeping things running, and organizing events at The Grain Shed. Teddy, his wife Alicia, and their new daughter Theo, live in a historic home in the Cliff-Cannon neighborhood and are busy refinishing it to its former glory!

DON SCHEUERMAN

Don Scheuerman is a man with a simple mission - revitalize grains thought to be lost and gone while also regenerating the soil of the Palouse that has been degraded over decades by agrochemicals and poor farming habits. Needless to say, he has faced a variety of challenges! With the help of his brother, Richard Scheuerman, Don has managed to bring back over 10 uniquely traditional varieties of grain with rich backstories, flavors, and impact on the land. These grains have then been incorporated into the bread, beer, pastries, and foods of The Grain Shed to bring together history and flavor. Don resides on his farm near Endicott, Washington to care for all of his wonderful grain!
